Vendaikkai fry / Lady’s finger fry / Okra stir fry

Vendaikkai has lots of health benefits, which is like rich in antioxidants, improve digestion, reduces constipation, good for pregnant women. Mostly problem is stickiness of the vegetable, but that is the good part. But here we are going to see a super crispy stir fry without the stickiness.

Course : Poriyal/ Stir Fry

Cuisine : South Indian

Recipe From : My Friend Mythili

Serves : Approximately 3 servings

Preparation time : 5 mins

Cooking time : 10 mins

Total time needed : 15 mins

Ingredients:

* Venadaikkai / okra – 250 g / you can add more

* Onion – 1 number

* Dry red chilli – 1 no

* Curry leaves – 1 string

* Oil – 1 tblspn

* Mustard seeds – 1/4 tsp

* Urad dal – 1/2 tsp

* Cumin seeds – 1/2 tsp

* Salt as needed

* Turmeric powder – 1/4 tsp

* Sambhar powder – 1 tsp ( as per your spice level) Homemade powder is fine.

* Butter – 1 tblspn ( the main secret ingredients)

Preparation Instructions:

1. Wash the vegetable and dry it well and then chop it into small pieces.

2. Heat a heavy bottom pan and add Oil, Mustard seeds , urad dal, cumin seeds and let it splutter.

3. Add chopped onions, dry red chilli, curry leaves and saute until the onion turns soft.

4. Add the chopped vendaikkai , salt and fry for few minutes in medium flame to avoid the burnt vegetable. You can close the lid cook .

5. Add butter and saute until the sickiness gone . After adding the butter, the stickiness will be gone soon.

6. Add turmeric powder, sambhar powder and fry for 2 minutes in medium low flame.

7. Crispy Vendakkai stir fry recipe is ready to serve.

Steps In Pictures:

recipe is ready to serve.

Note for the dish :

1. We can add channa dal also for seasoning.

2. Adding more onions will add more taste and crisp.

3. Adding butter is the secret ingredient here for the sticky free crispy fry.

4. We can serve the recipe with sambhar, rasam, curd rice, variety rice and plain rice also.
