Prawn fried rice / Shrimp fried rice / Prawn egg rice

This recipe is rice with fried prawn, fried egg and few fried vegetables. There is few steps to prepare separately like frying egg, frying prawn, cooking rice but the taste is worth for the work. Here we get to know the recipe.

Rice cooking time : 10 mins ( Done while frying prawn and egg)

Total time : 30 mins

Ingredients :

For Rice :

* Basmati rice – 1 cup

* Water – 2 cups

* Salt as needed

To Saute :

* Prawn / Shrimp – 15 – 20 nos ( prawn number is your wish)

* Egg – 2 nos ( Egg number is your wish)

* Onion – 1 medium no

* Carrot – 1 small no

* Beans – 4-5 nos

* Cabbage – 1/2 of small vegetable ( upto your wish of cabbage)

* Capsicum / Bell pepper – 1/2

* Garlic 3-4 cloves

* Olive oil / Oil – 4 – 5 tblspn ( for whole dish)

* Butter – 2 tblspn

* Cumin seeds – 1 tsp

* Dry red chili – 1 no

* Kashmiri chili powder – 1 tblspn ( for whole dish)

* Pepper powder – 2 tblspn ( for whole dish)

* Salt as needed

* Tomato ketchup – 2 tblspn ( upto your tangy flavor)

* Spring Onions to garnish ( I used coriander leaves instead)

Preparation Instructions:

1. Soak the rice for few minutes and drain it. Boil water, add rice and cook for 10 minutes , drain the remaining and let it cool. ( Do not overcook rice, just keep it fluffy)

2. Wash prawns with turmeric powder, salt and keep it ready.

3. In a Heavy bottom pan / Wok, add oil, washed prawns / shrimp and saute for 2 minutes. Then add chili powder, pepper powder and saute for 2-3 minutes. Prawn will be cooked for 75 percentage. Keep it aside.

4. In the same heavy bottom pan / wok, add oil, eggs, little salt, 1/2 tblspn pepper powder and stir it frequently until egg fried like burji / scrambled egg. Keep it aside.

5. Heat oil and butter in the heavy bottom pan / wok, add cumin seeds, chopped garlic and fry it until cumin seeds splutter.

6. Add sliced onions, dry red chili, sliced carrot, chopped beans and saute for a minute in high flame.

7. Add the sauted prawn / shrimp and stir fry it for 30 seconds.

8. Add chopped cabbage, long cut capsicum / bell pepper, required salt, Kashmiri chili powder, Pepper powder and saute for a minute like mixing all well together in high flame .

9. Add butter, tomato ketchup and mix well. Then add the fried egg, boiled riced and mix all well together gently without breaking the rice in high flame.

10. Switch off the stove and sprinkle some chopped spring onions to garnish. ( I used coriander leaves instead).

11. Recipe is ready serve with your favorite sauces.

Recipe is ready serve with your favorite sauces.

Note for the dish :

1. Fried rice must be cooked in the high flame, else the vegetables will get soggy. To keep the veggies crunchy, you can add little bit of sugar.







2. Instead of rice, you can add cooked noodles or cooked pasta to prepare prawn noodles or prawn pasta.

3. Do not over fry the prawn / shrimp as the fresh or cooked frozen prawn needs less time to cook.

4. Adding butter after veggies will enhance the taste and helps to avoid the stickiness. Also give you the glassy look / appetizing look.

5. Adding dry red chili will give you the schezwan flavour.
