Broccoli Soup / Broccoli Celery Soup / Broccoli carrot soup

Soup is kind of appetizer with a wholesome. This soup can be served for special occasions too as it is rich in taste and great at appetizing. Here we are using Broccoli, Carrot and Celery the best combination of healthy food. It can be a simple breakfast , brunch or simple dinner. Celery is good for inflammation, helps to reduce high cholesterol, blood pressure , digestion and a lots are there. As well Broccoli is also high in health benefits, as well Carrot also. Here we get to know an easy to prepare , delicious and rich to serve soup.

Serves : 3-4 serves

Preparation time : 5 mins

Total time needed : 20 mins

Ingredients :

* Broccoli – 1 small flower or 9-10 florets

* Carrot – 1 large no

* Celery – 1 medium no

* Onion – 1 no

* Garlic – 6-7 cloves

* Ginger – 1 medium piece

* Butter – 2 tblspn ( you can add more)

* Parmesan cheese – 3-4 tblspn ( cheese variety and quantity is totally upto your wish)

* Pepper powder – 1/2 tblspn ( as per your spice level)

* Salt as needed

* Water – 2-3 cups

Preparation Instructions:

1. Wash and roughly chop the vegetables, onions and keep it ready.

2. Heat a pan, add butter and the chopped ginger garlic pieces , fry it for a minute.

3. Add the roughly chopped onions and saute for a minute.

4. Add the roughly chopped vegetables, salt and saute well until they oozes out water.

5. Then add water and let it boil by covering a lid for minimum 5 minutes or until the veggies got cooked well.

6. Let it cool and add it to a blender / mixer jar and blend it to a smooth paste.

7. Heat the same pan with butter and add the smoothly blended paste and stir well.

8. Add Shredded cheese / cubed cheese, pepper powder and stir well until the cheese melts and turn off the stove.

9. Recipe is ready to serve with croutons, garlic bread or alone.

Note for the dish :

1. You can add or replace few vegetables like potato, beans.

2. You can add your choice of cheese to make the soup tasty.

3. You can add any types of broth instead of water.
