Ingredients :
* Egg – 6 ( count as you need)
*Oil – 1 tblspn
*Mustard seeds – 1/2 tsp
*Cumin seeds – 1 tsp
* Onion – 2
* Curry leaves – 1 string
* Turmeric powder – 1/2 tsp
* Homemade Sambhar powder – 1 tsp
* Pepper powder – 1 tsp (as per your spice level)
* Salt as needed
Preparation Instructions :
1. Boil the egg for 15-20 minutes by adding little salt.
2. Chop the onions finely and cut the eggs into half.
3. Heat oil in a pan, add the seasonings mustard seeds, cumin seeds and let it splutter.
4. Add chopped onions, curry leaves and saute it until the onions get golden brown.
5. Add salt and the spice powders turmeric powder, sambhar powder, pepper powder and saute it for half a minute.
6. Immediately add the sliced egg and mix it gently with the masala for a minute and turn of the stove.
7. Egg fry is ready to serve.

Note of the dish :
1. Adding shallots instead of big onions will increase the taste.
2. Mix the onion masala with the egg well and fry for a minute to avoid the egg smell.
