Ponnanganni is a medicinal value rich spinach.It comes under Amaranthus family.It is also called as King of spinach by considering it’s medicinal value.It is mainly benificial for eyes and also gives glow to our skin.This spinach is rich in iron,calcium,protien,phosphorus,vitamin A,B,C. With thoor dal and ghee this spinach helps to gain weight in a healthy way.This spinach extract with coconut oil in a balm like consistency can be used as a hair pack to reduce the body heat and eye defects. Now we are going to see the recipe of this spinach stir fry.

Total time needed:15 mins
Ingredients:
*Keerai/spinach -1 bunch
*Oil -1 table spoon
*Mustard seeds-1 tea spoon
*Urad dal -1 table spoon
*Shallots/Pearl onions-10 to 15
*Curry leaves -few
*Dry Red chilies – 2 to 3
*Garlic – 1 to 2 cloves
*Saambhar Powder – 1/2 table spoon
*Gratted Coconut -1/2 cup
*Salt -To taste

Preparation Instructions:
1. Wash the spinach and cut it into small pieces with stems along.
2.Heat oil in a kadai/frying pan.
3.Add mustard seeds and urad dal in the heated oil.
4.Then add sliced shallots/onions,curry leaves and red chillies and let it fry until the onions turn light golden brown .
5.Then add saambhar powder and fry it and immediately add the spinach(keerai) and salt.Let it fry by closing a lid.
6.Stir it frequently until the spinach oozes out the water fully.
7.Add or sprinkle some water and let it fry for 3 to 4 minutes.
8.Then add the shredded coconut and mix it well .
9.Poriyal is ready to serve.

crushed garlic cloves and red chillies
and saute for few seconds.

4.Then add the saambhar powder and
fry it.

5.Immediately add the chopped spinach and
salt and let it fry until the spinach oozes out
water by closing a lid.(approximately 2- 3 minutes).

6.Then sprinkle some water and let it cook
for 2-3 minutes,stir it frequently.

7.After the spinach wilted add the shredded
coconut and mix it well.

8.The healthy stir fry is ready to serve.

Note of the dish:
1.Wash the spinach before chopping into pieces .
2.Chop the spinach along with the stem,the stem itself contains lots of nutrients and easy to cook.
3.Add garlic or asafoetida to avoid the gastric problems.
4.Spinach usually oozes out more water while cooking,so sprinkle some water to cook.
