Plum Cake / Fruit Cake / Whole wheat Plum cake / Eggless plum cake / Steam Cake / No Oven Cake

This Plum cake recipe I am sharing is my first try and that was delicious, so I wanted to share with you all. Also I have prepared this one for a special occasion, that is my Sister and Brother’s Birthday. Actual recipe of plum cake is to be done with soaking nuts in days old grape juice like that but here I am sharing an instant soaking recipe. But not like that it is not taste as much, but it is.

Serves : 15 pieces approximately ( according to the size )

Preparation time : 30 mins

Cooking time : 50 mins

Total time : 80 mins

Ingredients :

Dry Ingredients :

* Wheat flour – 2 cups

* Brown Sugar / Raw cane sugar – 1 1/2 cups ( you can use white sugar as well) ( you can add more sugar as per your sugar taste)

* Baking powder – 1 1/2 tblspn

* Baking Soda – 3/4 tblspn

* Cinnamon Powder – 1 tblspn

* Elachi Powder – 1/2 tblspn

* Dry ginger powder – 1 tblspn

* Salt – 1/4 tsp

Nuts : ( I have used ) You can increase or decrease the amount and types of nuts if you wish.

* Almonds – 25 nos

* Walnuts – 25 nos

* Apricot – 10 nos

* Cashew nuts – 25 nos

* Golden raisins – 25 nos

* Tuti fruity – A handful

Wet Ingredients:

For Soaking :

* Orange juice – 1 full orange’s juice

* Brown sugar – 4-5 tblspn

* Water – Till it covers the brown sugar

For Heading :

* Buttermilk – Instant buttermik can be made by adding 3-4 tblspn of curd in more than warm hot boiled milk of 250 ml and keep it aside for 10 – 15 minutes, it will be ready.

* Vanila extract – 1 tblspn

* Vegetable oil / refined oil without odor – 1/2 cup

Preparation Instructions :

1. Before 1 hour of starting everthing, we have to soak the nuts in orange juice and sugar syrup.

2. Chop the nuts and keep ready in a mixing bowl. Add orange juice.

3. To prepare sugar syrup, in a bowl add brown sugar and add hot water until the sugar merges. Then mix it well and add it to the nut bowl and mix all well.

4. Keep it aside for 1 hour by cover it with lid.

5. First Pre heat the Oven for 350 degree fahrenheit / 180 degree celsius .

But I did this recipe through steaming method, Just heat enough water in a big pot by closing the lid tight / you can use Idly pot also.

6. If you are preparing instant buttermilk, do the process and keep it aside.

7.In a mixing bowl , seive the dry ingredients and keep it ready . No need to seive sugar.

8. Add the soaked nuts to the flour bowl, then add oil , add buttermilk, vanila extract and mix all well in cut and fold method or just mix gently well.

9. Then finally add some chopped nuts ( it is purely optional ) and mix gently.

10. Pour the batter in the cake pan. Tap the pan gently to release air bubbles, but not tap much times because the cake will get hard.

11. Place the pan inside the Boiling water by lifting it with a help of a stand or

Place it in the Oven if you are using.

12. After 45 – 50 mins , check it with a tooth pick and let the cake cool down.

13. After the cooling, cut the cake into pieces.

14. Recipe is ready to serve.

Steps in Pictures :

Note of the dish :

1. Dry ginger powder and elachi powder are essential one for digestion as we are adding numbers of nuts in this recipe.

2. You can add more types nuts if you wish.

3. You can soak the nuts more than an hour , it will definetly enhance the taste.

4. Do not frequently open the oven or the pot you are steaming , because the temperature will change while you are opening and it will take time to remain the required heat. So atleast for 25 minutes you should not open the oven or pot.

5. You can refrigerate the cake upto to 5 to 6 days, if you are using Maida/ All purpose flour , it will be stored for extra 2 to 3 days. After refrigerating the cake, reheating for 10 seconds in Microwave or 20 to 30 seconds in a pan will enhance the taste.
