Veg cutlet / Pan grilled cutlet

Veg cutlet is a delicious food with lots of health benefits from the vegetables. Here we are going make the cutlet more healthy by grilling it in pan and besan flour instead of corn flour. We can also use powdered Poha instead of bread crumbs. Let us do the delicious recipe.

Serves : Approximately 8 pieces

Preparation time : 15 mins (including the vegetables boiling time)

Cooking time :10 mins (per batch)

Total time needed : 25 mins

Ingredients:

* Carrot – 2 nos

* Potato – 2 big nos

* Peas – 1 cup

You can use Beans, Beet root also

* Capsicum – 1/2

* Onion – 1 big no

* Green chilli – 1 (as per your spice level)

* Coriander leaves / cilantro – 1 handful

* Salt as needed

* Gram flour / Besan flour – 2 tblspn

* Turmeric powder – 1/4 tsp

* Garam masala powder – 1/4 tsp

* Red chilli powder – 1/2 tsp ( as per your spice level)

* Bread crumbs / Coarse powdered Poha – To coat the cutlet

* Water as needed

* Coconut oil – 2 tblspn to shallow fry ( any type of oil is fine)

Preparation Instructions :

1. Boil the vegetables by adding little salt and water for 3 whistles or you can boil in a pot until it cooked well.

2. Drain the remaining water and let the vegetables cool and mash it well.

3. Add the spices powders, turmeric powder, red chilli powder, garam masala powder, chopped onions, chopped capsicum/ bell pepper , coriander leaves / cilantro, green chilli and mix all well together.

4. Add salt if required as we added while cooking the vegetables, then add bread crumbs / powdered poha and mix all well to a dough in gentle way.

5. Meanwhile, in a bowl add gram flour, little water and mix it well without lumps and keep it ready to coat.

6. Round the vegetable mix dough and gently flat it by using fingers. Then coat it in the gram flour mix all over the sides and coat it with bread crumbs / powdered Poha and keep it ready.

7. Heat a heavy bottom pan and add oil and place the coated vegetable patties in the oil and cover the lid , let cook for 5 minutes in a medium low flame.

8. Flip it around , sprinkle some oil and cover the lid and let it grill for 5 minutes in medium low flame.

9. Recipe is ready to serve with tomato ketchup or simply itself.

Steps In Pictures :

1. Add the vegetables in a cooker with

water.

2. Add salt.

3. Pressure cook for 3 whistles or

you can boil in a pot until it

cooked well.

4. Drain the remaining water and

let the vegetables cool and

mash it well.

5. Add turmeric powder, red chilli powder,

garam masala powder.

6. Chop the items finely.

7. Add the chopped onions, capsicum,

green chili, coriander leaves and

mix all well together.

8. Add salt if required.

9. Add bread crumbs / powdered poha and

mix all well to a dough in

gentle way.

10. Round the vegetable mix dough.

11. Gently flat it by using fingers.

12. Meanwhile, in a bowl add gram flour.

13. Add little water and mix it well

without lumps and keep it

ready to coat.

14. Coat the patty with gram flor

mix.

15. Coat it well with bread crumbs

and keep it ready.

16. Heat a heavy bottom pan and

add oil.

17. place the coated vegetable patties

in the oil.

18. Cover the lid and let it cook for

5 minutes in a medium low flame.

19. Flip it around and sprinkle some oil.

20. cover the lid and let it grill for 5 minutes

in medium low flame.

21. Recipe is ready to serve with

tomato ketchup or simply itself.

Note for the dish :

1. You can use the drained vegetable boiled water as soup or broth for curry.

2. You can deep fry the cutlet if you wish.

3. We can use this cutlet as a patty for burger.
