Paneer is most people’s favorite food. It is a protein rich vegetarian food too who do not get their intake from meat

products. It is rich in Potassium also. There are lots of delicious recipes by using Paneer, here we are going see one easy and

healthy recipe.

Serves : 2- 3 people (Full meal for 2 people)

Ingredients :


* Paneer – 100g

*Mushroom – 1 cup

* Carrot – 1 medium size

* Peas – 1 cup

* Basmati rice – 1cup

* Onion – 2

* Green chillies – 4-5 nos (as per your spice level)

* Curry leaves – 1 string

* Ginger garlic paste – 1 1/2 tblspn

* Mint leaves – 1 hand full

* Cilantro / coriander leaves – 1/2 cup

* Cashews – 5-10nos

* Water – 1 3/4 cup

* Ghee – 2tblspn

* Oil – 1 tsp

*Salt as needed

Spices :

* Bay leaves – 2 nos

* Star anise – 1 no

* Cinnamon stick – 1 long stick

* Cardamom 1 no

* Poppy seeds – 1/2 tsp

* Cumin seeds – 1 tsp

* Fennel seeds – 1/2 tsp

Preparation Instructions:

1. Soak the rice for 20 minutes.

2. Heat the pot(which we are going to make the pulao) and add ghee and Paneer, gently saute it to golden brown and keep it aside.

3. In the same pot, add ghee and oil.

4. Add all the spices and let it splutter.

5. Add sliced onions, curry leaves and green chilies and saute until the onion turns to golden brown.

6. Add ginger garlic paste and saute it until the raw smell turns off.

7. Add mushrooms,carrot and peas along with salt and saute it for 1-2 minutes.

8. Add the ghee roasted paneer and saute for a minute.

9. Add the washed and drained rice which was already soaked.

10. Add water and chopped mint leaves . Cover tightly the pot with it’s heavy weight lid and let it cook in the medium-low flame.

11. After 10-15 minutes or once the water disappears fully and turn off the stove.

12. Open the lid and sprinkle the coriander leaves . Gently mix the rice and veggies.

13. Ready to serve.

Steps In Pictures:

13. Add mint leaves.

14. Cover tightly the pot with it’s

heavy weight lid and let it cook

in the medium-low flame

for 10-15minutes.

15. Open the lid.

16. Sprinkle the coriander leaves and

gently mix the rice and

veggies.

Ready to serve.

Note of the dish :

1. You can add any vegetables you want like beans,potato.

2. Roasting the paneer in ghee will give softness and aroma.

3. Extra amount of water than needed for cooker is fine beacause the cooking in pot takes much water.

4. Adding Paneer just few seconds before adding rice will help to cook it not rubbery.

5. Adding mint leaves finally will increase the aroma, if you wish, it can be added before the veggies.
