Blueberry Muffin / Blueberry Wheat flour Muffin

Blueberry is a low calorie and high nutritious fruit. It is rich in vitamin C,K and Manganese. Manganese is

mostly found in dark skin fruits, which is good for joints. Here we are going to see the Muffin recipe with blueberry,which

will be easy to make the kids eat fruits. And also we are going to do this recipe with Wheat flour instead of all purpose

flour, which is more diet conscious too.

Ingredients :

Dry Ingredients :

* Blueberries – 1 1/2 cups

* Wheat flour – 2 cups

* Sugar – 1/2 cup (can increase few teaspoon sugar if you wish)

* Baking powder – 1 1/4 tblspn

* Baking soda – 1/2 tblspn

*Salt – 1/4 tsp

Wet Ingredients :

* Egg – 1 number

* Curd / Yogurt – 1 1/2 cups

* Unsalted Butter / Oil -1/2 cup

* Vanilla extract – 1 tblspn

Preparation Instructions:

1. First Pre-heat the Oven for 350 degree Fahrenheit  / 180 degree Celsius.

2. In a mixing bowl, sieve the wheat flour.

3. Then add the other ingredients in the dry ingredients that mentioned above.

4. Add the washed and dried blueberries and minx it well and keep it aside.

5. Add and whisk the egg in a bowl.

6. Add the curd / yogurt and whisk it.

7. Add melted butter / oil, vanilla extract and whisk it well .

8. Add the wet ingredients mix to the dry one and mix it in cut and fold method.

9. Pour the mix the buttered muffin pan or muffin cup one by one.

10. Bake it in the pre-heated oven for 30-35 minutes in the same temperature.

11. Check it by inserting toothpick or fork after 25 minutes, just to confirm because the flours and oven may differ in Baking.

12. Muffin is ready to serve.

12. Add Butter or oil.

13. Add Vanilla extract and whisk it all

together .

14. Pour the mix into dry ingredients.

15. Mix it well in cut and fold

method.

16. Pour the mix the buttered

muffin pan or muffin cup

one by one.

17. Bake it in the pre-heated oven

for 30-35 minutes in the same

temperature.

18. Cool it for 5-10 minutes.

19. Muffin is ready to serve.

Note of the dish :

1. Sieve the flour to avoid the lumps.

2. Adding Butter will moist the muffin than oil.

3. Adding Oil will retain the muffin for long time than butter.

4. Mixing the batter in cut and fold method will help you to mix it easily than whisking.

5. Check it by inserting toothpick or fork after 25 minutes, just to confirm because the flours and oven may differ in Baking.

6. After refrigerating, microwave the muffin for 10-15 seconds before serving.
